Skillet Mini MeatLoaves

Evanne Schmarder shows us how to make skillet mini meatloaves. Make them at home if you like, wrap them in foil. When at your campsite you can put the foiled loaves on the grill to heat them up for a nice dinner or cut them for cold sandwiches!

Recipe makes 2-3 loaves

  • 1/2 lb ground turkey with some fat
  • 1/2 cup bread crumbs
  • 1/8 cup milk
  • 1/2 tsp Worcestershire Sauce
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup shredded onion

Heat the skillet to 325 degrees

Use a little avocado oil in the skillet to brown the loaves on both sides.

Make 2-3 loaves. Add to skillet. Brown on both sides, then add a little water and cover skillet. Basically they are steamed until they reach 165 internal degrees. Add more water if necessary. Cook for about 5-10 minutes until done.

Make a sauce using 1/2 cup of ketchup and a tbsp of balsamic vinegar.

Let them cool and wrap them in foil to store. A little make ahead planning makes your RV trip so much more enjoyable.
